Do you ever felt the need to eat ice cream? Of course, you did, we all have. But sometimes, you don’t know whether you want more ice cream or, let’s say, peanut butter and jelly. Why not take both, mix it up into one fantastic recipe?
Such thing exists, and here it is to your pleasure. PB & J Ice Cream Cake can be made quickly, and you just need to follow the instructions.
By combining creamy peanut butter and frozen sweetness of the ice cream, this recipe uses sandwiches because they are easier to work with and because its cookie-like sides will break and soak the sweetness.
Which Ingredients Are Needed?
If you read the title carefully, you already know half of the needed items for this cake. Still, there are others which are required, and to make things easier, we will list them below.
● 1 cup of peanut butter
● 12 ice cream sandwiches
● ½ cup of jam (raspberries or strawberries)
● 8 oz of thawed whipped cream
● 3.5 oz of chocolate
There is one concern about jam, we used one made from raspberries, but you can use any other kind. Since this cake tends to be a bit sweeter, something which is neutral is perhaps better, such as blueberries.
Preparing The Ingredients
In the beginning, you will need a dish. We have used ordinary, plastic tray which can fit sandwiches without the need to cut them. There will be three layers of sandwiches, so plan according to this. In the end, it is better to eat one or two extra ice cream sandwiches, than to cut them.
Keep a mixer close at hand, it will be needed, and a few dishes as well. Concerning peanut butter, there is nothing special to say. Just use that brand which suits you the best, and which you have used before.
Some people advice to use specifically cooled whipped cream, others advice that this isn’t necessary, so when you buy a box or can of this ingredient, follow the label, and you won’t make a mistake.
As you have guessed, there will be some layers to make, so we will start with putting 1/3 of ice cream sandwiches at the bottom. Next, by using a spoon, take ½ of a cup of peanut butter, and spread it evenly. Top that with ½ of the prepared jam.
While you are making this, the rest of the ice cream sandwiches should remain in the freezer, so they don’t get soft.
Take another 1/3 (in this case it is four) of ice cream sandwiches and put them on the top of the jam.
As you may guess, take the rest of the peanut butter, spread it, and cover with the rest of the jam. Finally, add the remaining four ice cream sandwiches.
Frosting And Topping
As we said, whip the cream so that it is stable. Usually, it is needed just a few minutes in the processor. Keep in mind that it will harden even more once spread.
Cover the whole cake with it, and put it in the freezer. It is essential that you don’t put it in the refrigerator because the ice cream must be kept at below zero temperature.
Now the things are a bit easier. Set the stove to low heat, and put chocolate, one tsp of butter and two spoons of milk in a small pot. Mix continuously, since the chocolate will melt and once it is liquefied, spread it here and there on top of the cake.
We have used an ordinary spoon for this purpose, so you should be good as well. Of course, this is just a decoration, and if you don’t want to bother with it, it is not necessary.
Some people love to decorate the cake with fruit, but we felt that this would be too much. Just cut it and serve.
