Our recipes are just like that- easy to follow and delicious! Once you try either of the two sweet potato curry burger recipes we have prepared, you will be able to tell off anyone who tells you that a “real” burger can’t be vegan.

Version I- Sweet Potato And Beans Curry Burger

Sweet Potato Curry Burgers

Our first recipe takes about ten minutes to prepare, and twenty minutes to bake, which means that you will have to invest around half an hour of your time to make the succulent veggie burgers you are going to fall in love with.

You will need:

● One medium peeled sweet potato
● 16oz. of canned, cooked white beans (you have to drain them and rinse them well)
● Half a cup of chopped white onion
● Two tablespoons of tahini
● One teaspoon of apple cider vinegar
● One teaspoon of garlic powder
● One teaspoon of curry powder (or cajun spice) (you can use more or less depending on how spicy you like your burgers to be)
● Half a teaspoon of salt
● black pepper to your taste
● one-third of a cup of nutritional yeast (any flour will do though, we recommend oat flour as well)
● One cup of finely chopped greens (parsley, spinach, kale)
● One tablespoon of virgin coconut oil
● Skillet
● Mixing bowl
● Large fork
● Optional toppings: avocado, tomato, greens, a circle of onion, romaine lettuce, some Dijon mustard, vegan mayo

The preparation process:

First of all, you need to bake the sweet potato. To do that, preheat your oven to 400 degrees F and then bake the potato for up to an hour or until tender. You can skip this step and use the microwave instead, but know that although that method is much quicker, it will spoil the taste of the sweet potato a bit.

Rinse the beans with hot water and drain them well. Put the potato and beans into the large mixing bowl and use a large fork to mash them together well. Add the onion and continue mashing. Add all the remaining ingredients one by one while you keep on mashing.

The mixture should become unified and thick, but it will take some time for all the ingredients to blend well. We thus recommend that you leave the mixture in your fridge for an hour- it will not only allow all the spices to sink in but also make the patties-forming task much easier to perform.

Turn your stove top on and set it to high. Heat the coconut oil in a skillet. Use your hands to form the burgers from the sweet potato mixture and then place the newly-formed patties onto the oil. Brown the burgers lightly for a minute or two on each side and transfer them to a baking sheet.

Preheat the oven to 400 degrees and bake the patties for a quarter of an hour or so. You can even skip the skillet part, but we do not recommend it as it makes the burgers more tasty and crispy.

If you do not use up all the burgers at once, you can save them refrigerated in a sealed container for up to one day. If you want to store them for longer, you have to freeze them and use them within a month, although that might spoil their flavor and texture a bit.

When you want to reheat the burgers, we recommend that you use your oven. Set it to 400 degrees F once again and warm the burgers for about ten minutes.

Serving suggestions

If you can, toast the buns, choose your toppings, slice them and stack them. Place the warm patty on the bun and top it with some vegan mayo or spicy mustard.

Version II- Sweet Potato Curry Chickpea Burgers

Sweet Potato Curry Burgers

This version of sweet potato curry burgers will take a bit more time to prepare but is totally worth the extra effort! In order for you to easily follow the preparation process, we have divided it into two sections- making the actual burgers and making a sauce that takes the burgers up to another level.

You will need:

The Burgers

● One can of chickpeas (you need to drain and rinse them)
● Half a cup of rolled oats
● One cored and chopped jalapeno
● Two teaspoons of turmeric
● Two teaspoons of cumin
● Half a teaspoon of curry powder
● Half a teaspoon of salt
● Quarter of a teaspoon of cayenne
● juice of one lemon/ lime
● One peeled and diced sweet potato (medium size)
● Three garlic cloves
● Half a cup of cilantro
● Food processor
● Mixing bowl

The Cilantro Tahini Sauce

● One-third of a cup of tahini
● juice of two limes
● juice of one lemon
● One cup of cilantro
● One teaspoon of maple syrup
● Food processor
● Baking sheet with parchment paper

The preparation process:

1. Preparing the burgers

Use the food processor to blend the chickpeas, jalapeno, oats, lemon juice and spices. Set it to pulse and turn it on for about fifteen seconds so that all the ingredients are finely chopped. Pour the mixture into a large mixing bowl and set it aside for a moment.

Once again use the food processor to combine the sweet potato with garlic and cilantro. Pulse for another fifteen seconds or so and add this mixture to the large bowl with the chickpea mixture you have previously made. Stir the two mixtures to combine all the ingredients well.

Preheat the oven to 400 degrees F and use your hands to form six patties. Place the patties on the baking sheet with parchment paper and transfer them to the oven. Bake them for approximately fifteen minutes and then flip each patty to the other side. Continue baking for another fifteen minutes. Let the burgers cool for ten minutes before serving.

2. Preparing the cilantro sauce

It is quite easy to prepare this sauce- simply combine all the listed ingredients in your food processor and blend them until you get the smooth sauce. If needed, you can add some water as to thin it.

Serving Suggestions:

We would not like to repeat ourselves as serving these burgers is no different from serving the first ones. The only difference is the cilantro sauce that you can pour over your patties.

These burgers can also be stored in your fridge for a day or two, or frozen prior to cooking.
