In order to make two cups of vegan cream cheese, you will need:

● Two cups of unsweetened soy yogurt (approx. 500 g)
● Half a teaspoon of sea salt
● Napkin/cloth
● Cylindrical container
● Elastic band

The preparation process:

The first step you need to take is to drain out the excess liquid from the soy yogurt. In this way, you will get a creamy texture necessary for your creamy cheese to be deemed a success. Prepare the napkin or a piece of clean cloth, a cylindrical container (jar or appropriate large glass) and an elastic band.

Pour the soy yogurt into the napkin or cloth and position it in the container. Use the elastic band to secure the napkin. Allow the excess liquid to drip to the bottom of the container. This will not be a quick process but rather take a couple of hours. For this reason, you should place the container in your fridge for about eight hours and check if the consistency is right for you. If not, and you like your cream cheese to be more solid, let it sit for an hour or two more.

When your cream cheese is creamed to perfection, start adding the salt sparingly, checking for the right taste. Mix the cream cheese well as to achieve a consistent taste. If you add all the salt at once, you will not be able to do anything about it later on in case you or your family find the cream cheese to be too salty.

● One teaspoon (5 grams) of minced garlic
● One-quarter of a teaspoon of Kosher salt
● Freshly ground black pepper to your taste
● One tablespoon (14 grams) of lemon juice

When it is all well-combined and a bit fluffy add the herbs- chives and minced thyme.
